Our restaurant is ran by husband and wife duo, Ashley and Alasdair Wilkie. Ashley, running front of house, and Alasdair being head chef. Alasdair is largely self-taught and has gained his skills and experience through many years of hard work and focus in a kitchen environment, starting out at the age of 15 under Chef Iain Barr in Marmions Melrose.
Alasdair’s passion for food, ingredients and cooking techniques is evident to anyone who engages in conversation with him.
After building a foundation in classic French cooking there has been a constant will to add another dimension to each plate of food that leaves the kitchen. Alasdair builds anticipation of the food through the senses. He believes you eat with your eyes first and this is evident in each dish that he sends from the kitchen. The attention to detail, aromas, use of placement of his dish components are thought out to enhance the dining experience.
Our sommelier Elena; originally hailing from Italy, Elana came to live in Jedburgh after many years of learning her craft. Elena received her sommelier training and diploma at the prestigious Associazione Italiana Sommelier (AIS) in Rome. By participating at numerous wine-tasting workshops all around the world, she improved her knowledge about the world of wine. Having an experienced sommelier in house adds an extra dimension to the diners experience. Expertly pairing wine to complement the food from the kitchen has greatly enhanced the experience at the capon tree. Alasdair & Elena work together creating intriguing and exciting taster menus paired with wines in order to create Wine & Dine events for our customers. Our wine dinners are extremely popular among our loyal customer base – as we are educating them on unique and interesting food & wine pairings. Elena works with Ashley developing a wine list that has seen our list go from a selection of 30 wines to over a 100. Each wine chosen has a story, has been tasted and hand selected, quality, price, natural, biodynamic, organic are factors we look for.
Since opening in 2015 we have built a solid reputation through a number of local awards, Scottish Borders Best Restaurant 2017 and 2018, Lux Life Magazine – Most Intimate Dining Experience in the Scottish Borders and named UKs Best French Restaurant by The Travel and Hospitality Awards
